Coarsely chop half the walnuts and very finely grind the rest. Process dates into a soft paste in a food processor, adding just enough hot water, one tablespoon at a time, to make a stiff but pliable mixture. Transfer to a bowl and work in the coarsely chopped walnuts with your hands. Lightly oil your hands so the paste does not stick. Take small lumps of paste and roll into 1-inch balls. Roll each ball in the finely ground walnuts.
